Karen and Ryan's Wedding

The Dooleys are in Portland! Plus all the marital spam you can handle

Well guys.  We did it.

We drove for two and a half days stuffed into a MINI Cooper with two confused dogs clear across plains, mountains and a whooooooole lotta nothing at some points. But here we are. We made it!

If you follow me on snapchat (kiwi.snaps) you would have seen some of the hilarious photos I took in each state. It got weird. But I was tired. And now its gone forever. HAHA. thanks, snapchat.

When we finally got to our place it was about 10am local time. We got our keys, gave the  pups a chance to scope out the place and we began to settle in. Fortunately, we were able to have out things delivered a few days ahead of schedule. We unpacked out crates one day at a time and in just a weeks time, it already feels like home.

I’ll eventually get some nicer photos once we’re totally finished with hanging things up, and once my bedroom doesn’t look like a disaster but for now, you get the idea.

But enough about that! Lets start talkng about why you’re REALLY here.

WEDDING SPAM

Trust me, I have more than enough for everyone.

We decided to have our formal photographs taken in advance of the actual wedding. My reasoning? The day of is stressful enough with trying to get everyone together and organized. I wanted the day of our wedding to be as simple and stress-free as possible. I had my dress, Ryan had his suit, I decided to go with silk flowers because, really, why spend the money on something that’s going to die in like.. 3 days? so we were all ready to go waaaay in advance. It just made the most sense to me. That way, we have more time to mingle and entertain with our families, right?

My dear, wonderful friend Colleen you may know her from her Instagram @macweenie  is an amazing person, and truly the most creative and mind-blowing photographer. I don’t say that just because my friend… but it certainly doesn’t hurt. You can see it in her resting bitch face how much she genuinely loves her work. That’s not an insult, guys. Resting bitch face is not a bad thing…

Seriously, Colleen, I can’t thank you enough for all of your hard work and all of the amazing images you were able to provide for us. I knew they were going to be amazing, but as I was going through them, I literally cannot choose favourites. They’re ALL incredible.

You can check out her other amazing photo galleries on her website MacRamos Photography.

By this point you’re all probably like, “Shut the fuck up, Karen and get to the photos!” To that I say…

Alright. But there are a lot; don’t tell me I didn’t warn you…

OK OK OK… now for what you have been dying for… maybe?

FORMALS. Coz we fancy as fuck.

Are you ready for the most amazing part? amazing to me, anyway.

That’s only a few favorites from the shoot BEFORE the wedding.

Here’s more of what we got for the day of the ceremony…

If you’ve made it this far, congratulations!

You’re getting to the end… from here on you’ll see some family formals, reception candids and whatnot.

I hope you’ve enjoyed! If you’ve been married, tell me what was your favourite part of the day? Any special memories you’d like to share?

Enjoy the rest of the photos!!

Cinnamon Mug Muffin with Kodiak Power Cakes

I came across this recipe this morning because I reeeeeeeeally wanted a muffin or pancake or somethin this morning but I equally reeeeeeeeeeeally didn’t want to have to clean up afterwards.

So I consulted the internet gods.

The internet gods did not disappoint.

Kodiak Cakes makes some amazing flapjack mix and their Power Cakes mix has 14g protein per serving! Even using half the recommended serving size, you’re still getting a decent amount of protein in your muffin!

I found the recipe on the Kodiak Cakes website!

When I followed the recipe the macros are as follows:

  • 168 calories
  • Protein: 7.1g
  • Carbs: 28.6g
  • 13.5g sugar

OK, so they wouldn’t be great for an everyday breakfast, but I bet if I made a protein frosting or cream cheese frosting OMGGGGGGG it would be a great at least decent alternative to an 800-calorie Cinnabon!

Grease up your mugs and give it a try! Let me know how you enjoyed it (:

Hard Cider Glazed Chicken

Have you got some hard cider at home? What about some chicken? Some apples?

GOOD. Then you almost have enough to make this hard cider glazed chicken!

You Will Need:

  • 2-3 chicken breasts
  • 1 16oz bottle of hard cider of choice I used Angry Orchard Cinnful Apple, but you could use any flavour your prefer
  • 1 medium sized apple sliced into thin pieces I had Granny Smiths in the fridge and they worked wonderfully, but feel free to experiement and use the apples you like!
  • 1/2 cup brown sugar or coconut sugar
  • 1T reduced sodium soy sauce
  • Salt and pepper to taste

How-to:

  1. Add hard cider, sugar, apple and soy sauce into a pan over medium heat.
  2. Stir together and allow it to come to a boil. Let it cook until it has reduced by half this took quite a bit in my experience, so be sure to stir and check regularly. Once reduced, remove from heat.
  3. While your glaze is reducing, cook the chicken breast in the oven at 425 for 25 minutes.
  4. Pour the glaze over the chicken and turn your oven to broil to finish cooking the chicken.

I served this over a bed of salad greens, but you could have this with anything! Roasted veggies, quinoa.. or put it in a wrap!
